Session Blend - Doc Swinson’s specializes in blends of high-proof whiskeys for the connoisseur at heart, but sometimes you just want to enjoy a great bourbon with friends and let the night go on. This blend was made for the session; bold enough to be mixed into your favorite drink, yet smooth enough for anyone to enjoy right from the bottle.
Garryana - Exploring new oak species has been a major focus for our master blender, Jesse Parker, and when the opportunity to work with our own local Pacific Northwest Oak, Quercus Garryana, Jesse jumped on the opportunity. Quercus Garryana, or more commonly known as Oregon oak, is found growing on the Pacific coast from northern California to southern British Columbia. It even runs through the backyard of our aging warehouse. The marriage of our signature Blender's Cut whiskey and our local oak species really showcases the richness of the Pacific Northwest terroir offering deep, dark, and complex notes ranging from molasses, toffee, clove, BBQ plums, and a subtle wood smoke.
French Toasted - Resting your spirits in additional new or used oak of different origins can help balance, intensify, and mellow or savor the spirit in ways we may have never tasted before. This is the first release of our double oak whiskey line, and with the intention to focus on French oak, we selected casks often found in the maturation of some of the best wines in the world. Nestled in the heart of Cognac, France, Taransaud Cooperages is well known for high-quality and limited-production oak casks. Starting with trees from the famed Troncaise forest and seasoning the oak for no less than 36 months causes these barrels to have a subtle focus on minerality, and a boldness of sweet and spicy notes that complement our bourbon extremely well.
Pineau - Pineau des Charentes is a truly unique French aperitif, produced from a blend of fresh grape juice and young cognac, which is then aged in French oak barrels for several years. We let Doc Swinson’s blend of two five-year bourbon whiskeys rest in these barrels for several months, bringing hints of apricot, orange marmalade, and wildflower honey to the already delicious caramel and stone fruit notes of the bourbon. Grab it before it’s gone!
Bossa Nova - Brazilian amburana wood has been hailed as the "whiskey unicorn." It is the secret sauce that fills the gaps with cinnamon spice and sweetness, making for a well-rounded whiskey that transports you back to fresh snicker-doodles and cinnamon buns right out of the oven. We are excited to release this whiskey unicorn as these barrels have been a true dive into exploring complementary flavor profiles to our bourbons.
